Apple Cranberry Nut French Toast

I haven't posted to this blog since October 2, 2011. LAME....I know. I started it and thought I'd go crazy with it. That obviously has not been the case. I've only published two posts.


Maybe you'll start to hear from me more...maybe you won't.

MOVING ON...

I was craving French Toast this weekend. Convenient.....because Kellie bought a loaf of Italian bread on Friday to accompany our spaghetti.

I don't have prep pics because I didn't intend on this being as spectacular as it was. Check out the finished product....you'll want to make this. Trust me!


I used:

Italian Bread - sliced 1.5 inches thick
Butter at room temperature
Eggs
Unsweetened Vanilla Almond Milk (you could use milk..this is just what I had)
Cinnamon
Dried Cranberries
Chunky Applesauce
Syrup

I started by smearing the bottom of a glass baking pan with butter and placed the sliced bread in the pan. Then I used a whisk to mix up the eggs, almond milk and cinnamon. I stirred in the applesauce and dried cranberries after giving them a good chop. Pour half the mixture over the bread slices. Flip the bread slices and pour the other half of the egg mixture over them.

At this point I covered the baking pan and put it in the refrigerator so we could meet Kellie's mom and sister for coffee at Caribou. Next time I'll probably make this the night before and bake it in the morning. Easy...right!

Anyway....after returning from Caribou I let the oven preheat to 400. Then I tossed in the pan of egg soaked goodness! I baked it for ten minutes and then flipped the half baked toast. It went in for another 10. While it finished baking I toasted some walnuts in a dry saute pan.

BEEP BEEP...BEEP BEEP. DONE! Now...assemble...and EAT.

I need to go to bed. This will be my first 5 day work week since early December. YIKES. Wish me luck. The good news is that we still have one piece of this left. I'm definitely having it for breakfast tomorrow.
